5 minute tomato sauce
This sauce literally takes about 5 minutes to make. I love this recipe because of the  fresh tangy taste it has and the bright herb aroma that is presented. Canned tomato sauce has been sitting in the can for so long and any herbs that are in it have lost a lot of their fresh taste. The herbs used in canned tomato sauce were most likely dried when they went in anyway so it will never be as fresh tasting as this one is. For a treat make this sauce and toss with home made fresh pasta (see recipe on this blog).
3 cups good quality crushed tomatoes.
1/4 cup extra virgin olive oil
3 good sized cloves garlic minced
1 tsp lemon zest
1 big handful fresh basil washed and chopped
1 tbsp fresh ground black pepper
salt to taste

1. In a medium pot on medium heat add your olive oil and garlic.
2. Sautee the garlic for a couple of minutes until it is translucent.
3. Add your crushed tomatoes, lemon zest and basil.
4. Bring up to a simmer and add the pepper and salt to taste.
It's that easy.....
