If you are a parent you have heard it or seen it. You have watched your kids not wanting to eat anything but this food at restaurants, at home, anywhere and everywhere. It starts in young little kids like my son who get a taste of it and once they do just can't get enough. The food to which I am referring is one of the rare things he will actually eat. I am talking about chicken fingers!
Chicken finger mania is rampant in little kids and knowing that my son was not eating very well and this was one thing he liked I decided to make it a little more healthy. Here's what I came up with. They are still fried but at least they are home made.
4 boneless skinless chicken breasts. ( If the filet is not removed do so and you will get more chicken fingers)
3 cups bran flakes
1 cup flour
2 Tbsp garlic powder
2 Tbsp paprika
1 Tbsp chilli powder
2 Tbsp salt
1 Tbsp ground black pepper
1 Tbsp dry thyme
1 cup milk
1 1/2 cup veg. puree of your choice or just use a jar of baby food. ( mixed veg.)
enough oil to comer about 1.5 " of a large sauce pot or a pot with high edges
This recipe is pretty simple.
Grind up your bran flakes in a food processor until they are fine but still have a bit of grit to them. Add all your dry ingredients in a large bowl. Cut up you chicken breasts length wise to make nice fingers. In a separate bowl add the milk and your veggie puree. In a good sized sauce pot as seen in the photo below add about an 1.5 " of oil or so and set just above med heat. You want the oil to get to about 350 degrees F to fry so the fingers are not greasy. If you don't have a thermometer you can test by putting the end of a breaded piece of chicken and if bubbles pretty good you are ready to go.
Add your chicken to the milk mix and get it nicely coated. Toss this in the breading and then directly into the hot oil. When the chicken comes out of the oil place it on a baking sheet with paper towel and pat dry with paper towel to absorb all the oil. Now you are done. Freeze these babies and pop them in the microwave for about 30 sec or so to get them hot. You will have lots of dinners for your little one.
If you don't want to fry them you can put them in the oven on parchment paper after they are breaded and bake for about 15 min at 375 F but my son did not take to them as well this way. We will keep trying though.
