home made healthy granola
Just like a lot of people this time of year I start thinking about shedding some of that holiday weight and getting into shape and as everyone knows eating right is a big part of that process. I bought some store bought granola about 3 weeks ago and have been having it for breakfast mixed with cheerios every day. It is good but very expensive and like anything you buy processed in a box it is made with a lot of sugar and is skimpy on the expensive items like nuts, seeds and dried fruit. I put together this granola recipe which is loaded with quality ingredients and low in sugar. It has a lot of super foods in it like pumpkin seeds, cranberries, flax seeds, and cinnamon which is linked to lowering cholesterol and blood sugar levels. I mix this with whole grain cheerios for breakfast and it is fantastic but you could also mix it with fruit or yogurt. This recipe makes a big batch but it will hold for a couple of weeks in an airtight container or longer in the fridge. The best part is that for $2 more I made 4 times what I could buy in the store and it is 10 times better. I went to the bulk food store to get all of my ingredients.
3.5 cups 100% whole grain rolled oats
1.5 cups mixed nuts and seeds, raw unsalted (sliced almonds, pumpkin seeds, sunflower seeds, flax seeds, cashew pieces)
½ cup shredded unsweetened coconut
1 cup mixed dried fruit (raisons, cranberries, diced apricots)
2 tsp cinnamon
1/2 tsp nutmeg
1/3 cup hot water
1/3 cup honey (if you want to make this granola very special use a specialized honey with a unique flavour)
1 Tbsp canola oil
1 tsp vanilla
½ tsp salt

1. In a large bowl mix together your oats, nuts, coconut, spices and salt.
2. In a measuring cup mix the honey, hot water and canola oil.
3 Add the honey mixture to the oat mixture a bit at a time and mix well until it is all evenly incorporated.
4. Place a sheet of parchment paper on a baking sheet and spread your granola out evenly. The thinner the layer the faster this will toast.
5. Bake your granola in the oven turning and mixing with a spatula every 5 to ten minutes. As you get to the end of the cooking the granola will cook and brown much faster so you have to check it every 4-5 minutes.
6. When the granola is evenly browned remove from the oven and let cool.
7. Toss the granola with the mixed fruit and store in an air tight container or freezer bag.
