ingredients

pineapple salsa
1/2 golden yellow pineapple
1/4 red onion fine diced
1 Tbsp grated ginger
the juice of 1 lime
1 handful chopped cilantro
salt and cracked black pepper

chop everything up and toss it together. You want to do this a couple of hours ahead of time so all the flavours have time to hang out and get to know each other.

What a great topper to kick off the summer weather. I had this at a restaurant one time and had to recreate it as best as I could. I think it turned out very well considering I did not get the recipe from them. The cilantro, ginger and red onion adds big bold flavours to the sweet golden pineapple and the contrast is fantastic. This salsa is nice on spiced pork, chicken or fish. Try it with a piece of cajun coated fish, chicken or hot teriyaki pork.
