soy marinated cedar plank salmon
When the cooler weather comes around I start to get a craving for the warming smell of smoking cedar. To me it's a great autumn smell as crazy as it sounds. This recipe is very fast to put together and the results are fantastic. The flavours here are very interesting with a nice combination of smokey cedar and asian flare. Kim's parents were down a couple weeks ago and I made this dish for them. Kim's dad Joe was especially thrilled with this dish so I thought I would post it here because I have been meaning to give them the recipe. This one's for you Joe.

Fresh salmon filet portioned
1/2 cup soy sauce
2 Tbsp rice wine vinegar
1 Tbsp vegetable oil
1 tsp sesame oil
1 clove grated garlic
1 tsp grated fresh ginger
1 tsp sambal oelek
3 Tbsp brown sugar
Juice of 1/4 lemon
Juice of 1 med size orange
1. First thing here and the most important is make sure you pick out a nice fresh piece of salmon. The flesh should be firm and not slimy. It should not smell fishy but nice a fresh.
2. Soak you cedar plank in the sink submerged in water for about 2 hours prior to cooking.
3. Mix up all of your ingredients except the salmon in a large bowl.
4. Pour the ingredients into a nice flat container and add your salmon. Let the salmon marinate on one side for about 10 minutes on either side and place on the cedar plank.
5. Place the cedar plank on a medium low bbq for about 20 minutes or until firm to the touch. In the last 5 minutes of grilling spoon some on the marinade over the fish. The sides of the cedar plank should be charred and you should smell the wood.
6. Remove from the bbq and serve on the cedar plank for a nice presentation.

Submerge your cedar plank in the sink using 2 mugs filled with water.
additional tips:
You want to cook this fish delicately. A medium low heat on the bbq and cook it until just firm to the touch. It should be just a bit transparent in the middle. If you cook it this way it will literally melt in your mouth.
