spicy thai chicken pasta
About 3 weeks ago I realized that I forgot to plan one of the meals for the week so we were left wondering...what are we going to have. What was created from that question was perhaps one of my favourite recipes of all time. I looked in our cupboards and used what we had to put together this spicy thai pasta. When I first made it I only had angel hair rice noodles which did not work out very well but with this thicker rice noodle the dish was perfect. If you only make one recipe from this website let this be the one. It looks a little daunting because it has 20 ingredients but it's easy to throw together once you have everything ready. You will not be disappointed. It is sweet, slightly spicy but worn't burn the house down with tons of fresh herb flavour. You can use shrimp instead of chicken if you are a seafood lover.
1 lb sliced chicken
1 package rice noodles
1 cup broccoli slaw (found in your local grocery store). If you can't find this use 1 cup
bean sprouts and shredded carrots
1 Tbsp fresh chopped mint
1/2 cup chopped chives
1/2 cup chopped cilantro
2 Tbsp crushed peanuts
1 can coconut milk 370ml
3 Tbsp red curry paste
1.5 tsp sambal oelek
1 small yellow onion finely chopped
2 garlic cloves minced
1 large Tbsp peanut butter
the juice of 1 orange
the juice of 1 lime
1 tsp orange zest
1 tsp orange zest
1.5 tsp sesame oil
1 tsp soy sauce
1/2 tsp fish sauce
salt and pepper to taste
1. Cook your rice noodles using the instructions on the package, cool down and reserve.
2. Sauté the chicken in a wok with 1 tsp veg oil until cooked throughout and then remove and reserve.
3. In the wok with 1 tbsp vegetable oil sauté the onions, garlic, chilli paste and sambal oelek until translucent.
4. Add everything except vegetables, chicken and herbs and reduce by 1/2 as seen in the photo below.
5. Add the chicken and the broccoli slaw and simmer until the vegetables are cooked and the chicken is hot.
6. Add 1/2 of the herbs and cook for 1 minute.
7. Toss the noodles in and heat through.
8. Plate this up and garnish with the remaining herbs and crushed peanuts.

this is the consistency your sauce should be before you add the vegetables

sauté your onions, garlic and thai chilli paste in vegetable oil until soft and translucent
