Ah whip cream. It brings back some great childhood memories of sneaking to the fridge, opening the door and sticking the tip of that aerosol can in my mouth for a fill up. Good as this is out of a can, whip cream can be done so many ways. Make your own whip cream and try adding cocoa, vanilla extract, instant coffee granules or your favourite liquor for a little something special next time. You can also do some savory things with whip cream which is another post all together.

35 % heavy cream
granulated sugar ( 2 tbsp to 1/4 cup)

Begin with thoroughly chilled 35 % cream. Use a stainless steel mixing bowl and Chill it in the freezer. Whip the cream with an electric mixer on medium speed or if you want a little workout use a fine whisk and go to town. When soft peaks form add your sugar and any flavours you want. One of the things you don’t want to do is over whip the cream or you may have to use it on a cob of corn because it will turn to butter. Take into account the sweetness of the item you whip cream will be added to before adding the sugar and adjust the sugar accordingly. A contrast in sweetness is what you want to have with whip cream.
Different Flavours
Vanilla-flavoured whipped cream, add 1 teaspoon of vanilla extract.
Chocolate flavour add 2 tablespoons cocoa with 2 tablespoons of sugar.
Coffee-flavoured cream add 2 teaspoons instant coffee granules and 2 tablespoons sugar.
Booze it up with one teaspoon to 1 tablespoon of your favourite liqueur.
