Beef Stroganoff with Pasta

  • 400g Beef Fillet steak
  • 2 tbsp EVO
  • 25g Butter
  • 1 tbs flour
  • 1 onion finely sliced
  • 5 cloves of garlic finely sliced
  • 225g button mushrooms finely sliced
  • 2 tsp smoked paprika
  • 140ml soured cream
  • 3 tbs red wine
  • 1 tbs brandy spirit
  • 1 tbs sugar
  • Fresh coriander
  • S&P

Preparation method

  1. Remove any membrane from the beef fillet and discard. Cut into thin strips, season the meat with salt and pepper and roll in the flour.
  2. Heat a large non stick frying pan until hot, add a little oil when very hot, then add the meat. Stir fry until brown then lift out with a slotted spoon onto a plate.
  3. Put the butter in the pan, add the onions and garlic and cook over a low heat until the
  4. onions are really tender. Sprinkle in the paprika and stir in the mushrooms. Turn up the heat and toss for a minute.
  5. Add the beef, brandy, wine and sugar, stir to mix then add cream to the pan, stir and heat through. Season with salt and pepper to taste.
  6. Serve with pasta and parmesan  cheeese.
